Why we love red peppers
Versatile peppers are a brilliant addition to your veg drawer. Red peppers add a pop of colour to your dishes wherever they are used – blitz into a bold soup or add handfuls to stir-fries and traybakes. When eaten raw (either as a snack or in salads), they offer sweet, crisp crunch, but they also take well to being slow-roasted until sticky and jammy. Pair with spices and bold flavours, such as chorizo, to balance their sweetness, or complement with creamy dairy.
Health benefits of red peppers
The health benefits of peppers vary depending on their colour – red peppers provide more potassium, vitamin C and folate than yellow or green, for example. Peppers are rich in antioxidants and polyphenols, which are associated with better health and protection against conditions such as heart disease and cancer.
