What is paella?
Paella is one of Spain’s most famous dishes, originating from Valencia and named after the wide, shallow ‘paellera’ pan that it’s traditionally cooked in. The paella rice is traditionally flavoured with saffron and cooked with seafood, vegetables and meat such as chicken, chorizo and rabbit. The pan’s thinness and shallowness allow this dish to be cooked quickly and evenly, so the liquid is fully absorbed by the rice grains.Try our versions – from seafood paella to a vegan take and even Sardinia’s traditional adaptation
